Do you crave healthy indulgences? These sweet potato banana pancakes are sooo satisfying. Simple nutrient-dense pleasures found here!
My little one turns his nose up to sweet potatoes… unless they are in this pancake recipe, and then he gobbles up every last bite!
Sweet potatoes are high in fiber, antioxidants, beta carotene, and potassium, a fabulous combo supportive of good brain, vision, immune, gut and cardiovascular health. Potassium is important to regulate healthy blood pressure, a nutrient often depleted in modern diets and worth striving for. Bananas add additional sweetness and up the potassium in these yummy pancakes.
My favorite things about these pancakes is you can just throw the ingredients in the blender, and… voila! Blend and then cook on the griddle. Don’t forget a sprinkle of chocolate chips, pecans, or walnuts, and serve with berries. You won't regret it!

Ingredients
Pancakes
2 small sweet potatoes, cooked
1 banana
3 eggs
1/2 cup milk (we used hemp milk)
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
2 tsp pumpkin pie spice
1 scoop whey protein powder
1/4 cup hemp seeds
1/2 cup gf flour (we used Pamela’s) - or try your favorite protein powder!
1/2 tsp vanilla paste
2 Tbsp butter or coconut oil
Toppings
Plus mini chocolate chips to add while cooking
Top with butter, walnuts, pecans, and berries. No syrup needed!
Preparation
Step 1
The steps couldn't be easier. Add all your ingredients to a blender, minus toppings, and combine!
Step 2
Melt butter or coconut oil in a pan. Add your batter with a sprinkle of chocolate chips if you choose. It's optional but so delicious. Cook until your batter begins to bubble and become firm enough to flip, then flip and cook an additional minute or two on the other side, careful not to burn.
Step 3
Serve with butter, nuts, and berries. Truly delicious, without the syrup.
