This delicious Japanese dressing will make you want to eat more salad just so you can have more dressing.

Plus you get the added gut health benefit of miso, a fermented food, and the anti-inflammatory benefit of ginger!

Miso, a fermented soybean paste, is a treasure trove of gut-friendly probiotics that promote a healthy gut microbiome. These beneficial bacteria aid in digestion, nutrient absorption, and may enhance the immune system. Miso contains also antioxidants like phenolic compounds, which help neutralize free radicals in the body. This antioxidant activity supports cellular health and may reduce the risk of chronic diseases.

Ginger brims with health benefits. Its bioactive compound, gingerol, battles inflammation, offering cellular rejuvenation. With potent antioxidants, it fortifies the immune system. Known to enhance digestion and metabolism, ginger is a great daily addition to a healthy lifestyle.

Ingredients

  • 1/3 cup olive oil

  • 2 Tbsp white miso

  • 1 Tbsp lemon juice, fresh

  • 2 Tbsp seasoned rice vinegar (if using plain, add salt)

  • 1-2 inches ginger, peeled and sliced

  • 1 garlic clove

  • 1.5 medium carrots, chopped (for a smoother dressing, steam carrots first)

  • 1 Tbsp maple syrup
