Want a delicious way to add more veggies into your diet? Enter these quick and easy cabbage carrot fritters with ginger sriracha mayo. With sushi ginger? Yum!

Let’s talk about some of the health benefits of cabbage - a delicious vegetable with potent healing properties.

Cabbage helps improve liver break down of estrogen by as much as 50%, reducing women’s risk of developing breast cancer. Cabbage juice can help quickly heal peptic ulcers. High in fiber, sulforaphane, and vitamin C, it needs a spotlight of its own!

Ingredients

  • 2 eggs

  • 1.5 Tbsp coconut aminos

  • 1/4 cup flour (I used Namaste GF)

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 2 cups shredded cabbage & carrot

  • 1 shallot, chopped

  • 1.5 Tbsp avocado or coconut oil to cook

  • 2 Tbsp mayo (I used Primal Kitchen 🥑)

  • 1 tsp sriracha (I used Sky Valley)

  • 1/4 tsp ginger

  • sushi ginger to serve


Preparation

Step 1


Dice shallot.



Step 2


Whisk together eggs and coconut aminos until well blended.



Step 3


Add flour, salt, and pepper. Blend until smooth. Then add shallot, cabbage, and carrot. Mix well with a fork.


Step 4


Heat oil on medium heat in a pan. Once oil is heated, scoop a dollop of your fritter mixture, pressing to make flat, and cooking a few minutes on each side until golden brown.



Step 5


Mix mayo, sriracha, and ginger for dipping sauce.



Step 6


Serve with a dollop of sushi ginger and enjoy!
