Ingredients
2 eggs
1.5 Tbsp coconut aminos
1/4 cup flour (I used Namaste GF)
1/4 tsp salt
1/4 tsp pepper
2 cups shredded cabbage & carrot
1 shallot, chopped
1.5 Tbsp avocado or coconut oil to cook
2 Tbsp mayo (I used Primal Kitchen 🥑)
1 tsp sriracha (I used Sky Valley)
1/4 tsp ginger
sushi ginger to serve
Preparation
Step 1
Dice shallot.
Step 2
Whisk together eggs and coconut aminos until well blended.
Step 3
Add flour, salt, and pepper. Blend until smooth. Then add shallot, cabbage, and carrot. Mix well with a fork.
Step 4
Heat oil on medium heat in a pan. Once oil is heated, scoop a dollop of your fritter mixture, pressing to make flat, and cooking a few minutes on each side until golden brown.
Step 5
Mix mayo, sriracha, and ginger for dipping sauce.
Step 6
Serve with a dollop of sushi ginger and enjoy!
